On the slopes of Vesuvius, where the soil is dark and rich in minerals, our olive trees root themselves in a soil unique in the world. This Extra Virgin Olive Oil is the result of a careful selection of two noble varieties, capable of conveying the strength and sweetness of our territory.
The Blend:
Itrana Variety: Typical of Lazio but perfectly adapted to our soils, Itrana gives the oil character and an unmistakable aromatic profile, with its renowned hints of green tomato.
Leccino Variety: One of the most elegant cultivars, which provides balance, smoothness, and delicate notes of fresh almond, making the oil harmonious and versatile.
Sensory Profile
Appearance: A clear golden-green color, shimmering like the sun of the Gulf.
Aroma: Upon opening the bottle, a fresh scent of freshly cut grass is released, enriched with nuances of tomato leaf and hints of artichoke.
Taste: The initial taste is sweet and smooth (thanks to Leccino), then opening into a pleasant spicy note and a slight bitter hint on the finish, typical of high-quality oils rich in polyphenols.
Culinary Uses
This oil is the soul of the Mediterranean diet. Thanks to its balance between strength and delicacy, it is perfect for:
Raw: On a classic bruschetta or with cherry tomatoes, on a Caprese salad with buffalo mozzarella, or to finish a legume soup.
