Our Caprettone DOP is a tribute to the raw power of the Vesuvian land. Produced exclusively with 100% pure Caprettone grapes, this wine stands out due to a precise stylistic choice: a light skin maceration. This process extracts not only color but the very soul and essential oils held within the skins, resulting in a white wine of unusual complexity and depth.

While many whites aim only for immediate freshness, our Caprettone seeks substance and structure. The controlled maceration grants it a bold personality, making it a vibrant, textural wine deeply rooted in its volcanic terroir.

Tasting Notes

  • Color: A deep and brilliant golden yellow, intensified by the contact with the skins.

  • Bouquet: A rich and enveloping bouquet. Notes of ripe yellow-fleshed fruit, citron zest, and a delicate weave of medicinal herbs. On the finish, the unmistakable signature of Vesuvius emerges: a powerful sulfurous and flinty minerality.

  • Palate: Full-bodied and almost tactile on the palate. The light maceration provides a harmonious body and an incredibly long persistence, balanced by a mineral savoriness that cleanses the palate and recalls the sea.

Gastronomic Pairings

Thanks to its robust structure, this Caprettone holds its own against even the most flavorful dishes:

  • Earth-Based Dishes: Excellent with mushroom-based recipes, grilled vegetables, or pasta dishes tossed with aromatic herbs.

  • Sea and Beyond: Fried salt cod (baccalà), savory fish stews, or grilled shellfish.

  • Cheeses: Pairs beautifully with bloomy-rind cheeses or medium-aged pecorino.

FROM THE VESUVIUS VINEYARD

Wines that tell a story of their land

Our vineyards grow on the volcanic soils of Mount Vesuvius: mineral-rich, dry, and exposed to the sun of the Gulf. Each bottle carries the character of this land — made of volcano, sea, and hands that have cultivated for three generations.
